"Make Over My Thanksgiving Leftovers!"
What are you going to do with the insane amount of delicious, calorie-bomb Thanksgiving leftovers sitting in your fridge? Eat them, of course -- but only after giving each dish one of these easy, healthy upgrades
Leftover: Turkey meat
Makeover: Clean-the-fridge chiliIf you've made your smoothie, parfait, and pasta and still have a fridge full of leftovers, it's time to whip up some chili. Toss your leftover vegetables and shredded turkey meat into a big soup pot and add diced tomatoes and kidney beans. Then for your liquids, add a dark beer, such as Guinness. "Dark beers give you B vitamins as well as fiber-rich beta-glucan," says Dubost. You actually get more nutrition from Guinness than you do from chicken broth, she says. Plus, the kidney beans are a good source of protein, B vitamins, iron, and manganese -- with zero fat. Add in some spices like chili powder, cumin, and ground red pepper to taste, and let it boil on medium heat for 45 minutes.
