If you like your sun-soaked beaches with a side of adventure, head to down to the jungles and beaches of Belize. Hit Ambergris Caye and snorkel the reef for some amazing underwater viewing, then head inland to the Actun Tunichil Muknal (ATM), a series of underground caves filled with ancient Mayan relics. Added bonus: English is the official language, so there's no language barrier.
