Mocha Chip Mug Cake
This divinely rich (and easy) dessert was made for the coffee addicts among us. Add 1/4 cup of your favorite brew to this recipe to create your perfect mocha chocolate mug cake.

Ingredients:
2 tablespoons coconut flour
1 tablespoon unsweetened cocoa powder
1 tablespoon dark brown sugar
1/4 teaspoon baking powder
1 tablespoon coconut palm sugar
1/4 cup brewed coffee
1 egg
1 heaping tablespoon chocolate chips

Directions:
Stir coconut flour, cocoa powder and baking powder in microwave-safe mug. Add in sugar and coffee, stirring until smooth. Next, mix in the egg and fold in chocolate chips.

Microwave on high for 2 1/2 to 3 minutes. Remove from microwave, grab a spoon and go to town.

Vegan Peanut Butter Mug Cake
No dairy? No problem. This truly scrumptious peanut butter mug cake involves no butter, eggs, milk or any other animal-derived products. Proof that microwave desserts can cater to any diet.

Ingredients:
2 tablespoons white whole wheat flour
2 tablespoons peanut butter
2 tablespoons unsweetened almond milk
1 tablespoon pure maple syrup
1/4 teaspoon baking powder
1/2 teaspoon pure vanilla extract
Chocolate chips for topping

Directions:
Add all ingredients (except for your chocolate chips) to a microwave-safe mug. Stir together until smooth.

Microwave on high for about a minute, until the cake has risen. Top with chocolate chips, and enjoy.

Two-Minute Tiramisu
With this easy mug cake recipe, you can treat yourself to a timeless Italian dessert without spending $12 at a restaurant. Better yet, the recipe contains no butter or added sugar, making it pretty guilt-free as far as microwave desserts go.

Ingredients:
1/3 cup oat flour
1/2 teaspoon vanilla extract
1 egg white
1 tablespoon espresso

For the cream filling:
3 egg yolks
1 tablespoon agave nectar
1/4 cup milk
2 tablespoons cream cheese

Directions:
Combine oat flour, vanilla extract, egg white and milk, and microwave for 2 minutes, stopping every 30 seconds until done. Pour espresso over top and let sit while you prepare cream filling.

For filling, cook egg yolks on double broiler over boiling water for about 5 minutes, stirring constantly. Remove from heat, and whip yolks until thick. Add cream cheese to yolks, beat until combined.

Cut your mug cake in half. Take the top half off, scoop cream filling in the middle, then place the top half back on and layer the remaining cream on top. Top with nuts, if desired.

Itty Bitty Banana Bread
Baking a whole loaf of banana bread is a risky endeavor -- not only does it take a ton of effort and time, but goodness knows it's almost impossible to resist eating the whole thing in one single sitting. Instead, satisfy your banana bread cravings with this delicious diet-sized mug cake.

Ingredients:
2 tablespoons coconut flour
1/4 teaspoon baking powder
2 teaspoons brown sugar
1/4 cup almond milk
1/2 ripe banana
1 teaspoon almond butter
Sprinkle of chocolate chips

Directions:
Add coconut flour and baking powder to a microwave-safe mug. Stir until combined. Add brown sugar and milk, stirring until smooth. Add mashed banana and nut butter, mixing well. Sprinkle with chocolate chips, if desired.

Microwave on high for 2 1/2 to 3 minutes. Remove from microwave, and serve.

Blueberry Coffee Cake
If you're in the mood to get a little bit fancy, tuck into this blueberry mug cake with cinnamon streusel. The recipe is simple, but the final result is like something you'd eat in an elegant café.

Ingredients:
1/2 tablespoon butter
1/4 teaspoon sugar
1 tablespoon brown rice syrup
2 tablespoons unsweetened applesauce
3 drops vanilla extract
1/4 cup flour
Pinch of salt
2 teaspoons blueberries

For the streusel:
1/2 tablespoon butter
1 heaping teaspoon flour
1 tablespoon brown sugar
1/4 teaspoon cinnamon

Directions:
Place 1/2 tablespoon butter in a mug, and microwave for 5 seconds to soften. Stir in sugar and brown rice syrup, and mix until blended.

Next, add the applesauce, vanilla, flour, baking powder and salt, stirring until just combined. Gently mix in the blueberries.

In a separate bowl, combine all streusel ingredients, and mix until you get a sandy texture. Pour over the cake batter.

Cook in the microwave for 75 seconds, and dig in.
