Salted Caramel Cutie
Salty-sweet is one of our flavor combinations, and this salted caramel mug cake hits the spot. All it takes is eight ingredients and three minutes of your time.

Ingredients:
3 tablespoons butter, melted
1 egg
3 tablespoons milk
4 tablespoons plain flour
3 tablespoons brown sugar
1/2 teaspoon baking powder
1/2 teaspoon sea salt
2 tablespoons salted caramel sauce (either from the store or this homemade recipe)

Directions:
Put butter into mug and microwave for 10 seconds to melt. Add egg and milk, and lightly whisk with a fork until combined.

Add dry ingredients and whisk until mixed. Add a tablespoon of salted caramel to the top of the mixture (this will sink to the middle as it cooks).

Cook in the microwave for 1 minute on medium heat. Remove, and drizzle the top with the second tablespoon of salted caramel.

Coconut Cake in a Mug
Coconut has been having a major moment for a while now (coconut oil, coconut water, coconut milk), so you might already have some of these ingredients. This mug cake might not be low-fat, but it's so tiny, you can sit back and enjoy.

Ingredients:
4 tablespoons all-purpose flour
1/4 teaspoon baking powder
2 teaspoons granulated sugar
2 tablespoons coconut milk
1 tablespoon coconut water
1/2 tablespoon vegetable oil
1 to 1 1/2 tablespoons sweetened coconut flakes

For the topping:
1/2 cup heavy whipping cream
2 tablespoons granulated sugar
1 tablespoon sweetened coconut flakes

Directions:
Combine all ingredients (except coconut flakes) in a large microwave-safe mug. Mix with a small whisk or fork until smooth. Stir in coconut flakes.

Cook in microwave for a minute to a minute and 15 seconds. Let cake cool for a few minutes.

To make the topping, add the cream and sugar to the mixing bowl of a standard (or handheld) mixer. Mix on high speed until peaks form. Top the cake with the whipped cream, and sprinkle coconut flakes on top.
