There are a few things to remember with lunch bowls: 1. Choose different flavors, textures and colors. 2. Don't get hung up on a recipe if you don't have the exact ingredients. Make it work with whatever is in the fridge. 3. Having a grain and/or legume with different vegetables and salad leaves is a good balance to remember. It's mezze in a handy take-to-work bowl. As much as we'd like to go to the Mediterranean restaurant around the corner every single workday, it's not possible. This rice bowl is just as delicious but won't drain your bank balance as quickly. Make it with grilled chicken, falafel, or both. We won't judge.

It takes 20 minutes to make these paleo-approved chicken meatballs and most of that time is waiting for them to bake in the oven. Combine the finished meatballs with avocado, tomatoes, lettuce and carrots. Top with tortilla chips before serving for more Tex-Mex vibes. If you happen to have any extras, you'll be set for a delicious dinner.
