polishing nails

OK, I need some feedback on this. My manicurist will polish both hands and then go right back and do the second coat right away. Now, it takes forever to dry (she doesnt spray my nails with anything) and I sit there wondering if I should sit waiting between coats,or wait all at the end? Oh, I have gel nails which shouldnt make a difference really,but am I just thinking its weird. I mean when I paint my own, I wait a while for one coat to dry before doing the other one.
Is this accepted practice?

I don't know how professionals are taught to do it, but that's how I do it.
I do left pinky to thumb, right pinky to thumb, then go right back to the beginning (left pinky) without waiting.
But then I do apply a quick dry top coat (Oh So Wet) so no waiting is involved after I'm done polishing.
Hope that makes sense.
