So I have a dilemma...My hair type is extremely curly, coarse, dry, and long. I've always heard that you really shouldn't shampoo more than two to three times per week, but I have a hard time sticking to this. I live with a smoker and if I don't shampoo my hair daily, it will smell like cigarette smoke (yuck!). Do you have any personal remedies or suggestions of something I can at least rinse my hair with daily to keep it smelling fresh and smoke-free while also helping to cut out the dryness?

Just use conditioner. Most conditioners have low levels of surfactants (the ingredients that do the cleaning in shampoo), so you'll get at least some cleaning without the harshness of shampoo. I do believe that there's even a popular program nowadays ("Curly Girl" or something like that) that advocates only using conditioner for cleaning your hair.
